Healthy Fruit Desserts for Summer

It’s summer.  For most students who are on vacation, they want to learn something new.  If you are not a student, then maybe you simply want to learn something new even if you don’t have a summer vacation.

So, here are a few easy fruit dessert recipes that you can try making.

Fruit Kebab

Fruit Options would be red grapes, half inch chunks of sliced bananas, pineapple chunks and kiwi. Thread them all in a skewer. To add a bit of a twist, you can make a lemony dip.  You can put together 4 ounces of low fat lemon yogurt, whisked with 1 tablespoon lime zest, and fresh lime juice.

Caramel Bananas

Peel and slice 2 medium sized bananas into half, lengthwise. To make the caramel, you need to melt a half tablesoon of low fat butter on a pan, at low-medium heat.  Sprinkle light brown sugar on top of the lengthwise sliced bananas and cook it.  By now, you should be adding half a cup of orange juice and a pinch of cinnamon.  Cook for both sides of the bananas for 1 more minute.

Grilled Pineapple

Marinade the pineapple chunks.  Marinade ingredients would be 1 tablespoon olive oil, 2 tablespoons dark honey, ¼ teaspoon ground cloves, 1 teaspoon ground cinnamon and 1 tablespoon fresh lime juice.  After marinade, grill the pineapple chunks.  Then serve.
